Slow Cooker Chicken Bacon Ranch Pasta

This was another dish that I made for my Bacon Potluck. Thanks to my slow cooker, it was easy to throw together and it cooked while I  cleaned up. It was a hit-- Of course it was, you can't beat the combination of bacon, ranch, and chicken!!

Slow Cooker Chicken Bacon Ranch Pasta

  • 3 garlic cloves, minced
  • 1 package ranch dressing mix
  • 1 10.75 oz can condensed cream of chicken soup
  • 1 cup sour cream
  • 1 lb boneless, skinless chicken breasts
  • 1/2 c. Real Bacon Bits
  • 1 pound of pasta-- I used Rotini

Sweet Baby Ray's Crockpot BBQ Chicken

My husband loves BBQ chicken, so I figured I would surprise him and make some in the crockpot. It only took about 2 minutes to get it going and 6 hours later-- PERFECTION! It was so juicy and tender! This is a definite must try recipe!

Sweet Baby Ray's Crockpot Chicken

4-6 boneless, skinless chicken breast
1 Bottle Sweet Baby Ray's Barbeque Sauce
1/4 cup vinegar
1/4 cup packed brown sugar

1 teaspoon red pepper flakes
1 teaspoon garlic powder

Place chicken in crockpot.
In a bowl, mix the rest of the ingredients.
Pour sauce mixture over chicken and cook on low for 6 hours.

*Serving Suggestions-- shred the chicken with 2 forks and serve on buns, serve the chicken over rice, or serve it on it's own.

My husband preferred to have his served as an open face sandwich--
somewhere under all that chicken and sauce there is a piece of bread!

Everything has been so hectic around here, I am still trying to get back into the groove of the school year. Life is back to normal-- NORMAL = CRAZY here! Ha! School, Boy Scouts, Cub Scouts, school activities, and fundraisers are quickly filling up my schedule. Busy or not, I still have to feed my family. I love to turn to my slow cooker for those busy evenings. I found this recipe over the summer and wanted to try it out. My family and I really enjoyed it, so I thought I'd share it. The best part of this recipe is it only took me a few minutes to get it going!

Slow Cooker French Dip Sandwiches-- SO GOOD!!

I love when a meal tastes like I've been cooking all day, especially when I wasn't. The only thing that was working in the kitchen all day was my slow cooker and the end result was amazing!! I received this recipe in a recipe swap I participated in a few months ago. I have been dying to make it and finally got around to making it today. Everyone in my house was VERY happy, it was absolutely delicious!! I spent no more than 10 minutes preparing everything before it went into the slow cooker and only about 10 minutes afterward. I let it cook for 7 hours and  believe me, I was counting down the minutes until it was done! The aroma of it cooking made my mouth water!

Slow Cooker French Dip Sandwiches

Ingredients:

  • 3 pounds beef chuck roast
  • 1 medium yellow onion
  • 3/4 cup beef broth
  • 1/4 cup soy sauce
  • 1/2 cup water
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon mustard
  • 2 cloves garlic, roughly chopped or minced
  • 6-8 steak rolls
  • 6-8 slices provolone cheese (We prefer 2 slices per sandwich)

Instructions:

Slice onions, keeping rings intact. Layer in the bottom of your slow cooker.
Add broth, sauces, water, mustard, and garlic.

Season your meat with salt and pepper. Brown the sides on high in a frying pain to sear in the flavor. *You can skip this step if desired, but I prefer to brown it.
Add the meat to the slow cooker, cover and cook on low for 6-7 hours.
Shred the meat using two forks.
Serve the meat on the steak rolls and top with provolone cheese.  Serve the Au jus on the side for dipping.
*I put the cheese on the steak rolls and toasted them lightly to warm the bread and melt the cheese.

My husband preferred to have his as an open faced sandwich! Yum!

3 Ingredient Slow Cooker Tacos

Slow Cooker Tacos are delicious, super easy to make with only 3 ingredients, and only require about 2 minutes of preparation! My family loves tacos, so I make these every 2 weeks or so. I sometimes make extra so we can use it to make Chicken Quesadillas later in the week.

Ingredients:
Boneless skinless chicken breast
Jar of salsa
Packet of taco seasoning

Directions:
Lay your chicken in a 4-6 quart slow cooker. Open the jar of salsa and mix in the packet of taco seasoning. Pour salsa mixture over chicken. Cover and cook on low for 6-8 hours or on high for 4 hours. After chicken is cooked, shred chicken using two forks. Serve on taco shells along with your favorite toppings.
