Don't Judge A Book By It's Cover...

We have all heard that, this pen makes that quote ring true!


 
I recently received three UGLEE pens to review, one which I will be giving away. My first thought was "WOW! It really fits the name, it is UGLY!" I will admit, as ugly as it was, I was still intrigued by it's title, "The World's Most Comfortable Ergonomic Pen." The UGLEE pen was designed and created by Doctor James Lee, after years of searching for a comfortable ergonomic pen.

The UGLEE Pen was designed for comfort and cramp free writing, it delivers. I used it to write my grandmother a letter. This day in age, how many people actually sit and write a letter? I honestly hadn't written a letter in years up till a few months ago. My grandmother recently had a stroke and is residing in a nursing home so that she can get the care and help that she needs, so I try to write her a letter every now and then to lift her spirits. I have carpal tunnel syndrome and arthritis in my hand (from many years of competitive cheerleading) and I wrote a three page letter without my hand feeling fatigued, cramped, or strained. Whether you write all day or just minutes, you’ll be able to do so without cramping or strain.  It is extremely lightweight. The barrel of the pen is really squishy and soft and conforms to your fingers, making it very comfortable. The ink is very smooth, it writes a little wider then I am use to, but overall, I like it. Like I said, the pen is really not easy on the eyes, but it really is comfortable. Kind of like a beautiful pair of heels vs. that old broken pair of ratty gym sneakers-- nothing beats those old comfy sneakers!!

The Easiest Way To Cut An Avocado

My kids and I love avocado. I buy them often, because they are so good for you (even though they are fattening). For a long time I struggled with cutting them, until I learned this...
 
Cut your avocado in half.
Remove the pit by lightly stabbing your knife into it and pulling it out.
Cut slices or cubes while the avocado is in it's skin.
Don't cut the skin.
Using a spoon, scoop your slices or cubes out. Start at one side and glide the spoon to the other side.
All of the pieces will come right out, leaving behind the skin.
 
I wish I had an avocado right now!

Wooden Butter for a Play Kitchen

My youngest is dying for a play kitchen. He had one a few years ago, but I got rid of it when he no longer played with it. With all of the cooking and baking we have done, it seems to have renewed his interest. We have decided to get him one for Christmas, I actually bought a used one off of my friend. It is an awesome wooden kitchen, he is going to be so excited when he sees it. I am not a big fan of the cheap plastic play food, I prefer the wooden and felt food. The wooden and felt food seems to hold up a lot better. To go along with the kitchen, I have decided to make him a set of felt food. When I was at the craft store picking up some felt, I came across these little wooden tiles.
 
 
I thought they were the perfect size to make little wooden slabs of butter. For just over $1, I decided to grab them.
 
 
I painted them with a few coats of yellow acrylic paint....

 
Now he'll have 5 little slices of butter to add to his play food, they will go perfectly with the wooden stick of butter that he already has.
I can't wait till Christmas, he is going to be ecstatic when he sees his kitchen and all his new play food!

It Is True...

As much as I hate to admit it, this is so true! I love my mother more than words can say, she is the absolute best, but I don't want to sound like her! Ha! As the days go by, I find myself saying more and more of the things she used to say to me when I was growing up...

Pumpkin Pancakes

I made Pumpkin Pancakes for our Pumpkin Potluck the other night. I love adding fruits and vegetables to dishes that are not normally real nutritious, which is one of the reasons why I love this potluck. I love it for other reasons too-- I LOVE pumpkin and I love to experiment and try new recipes and concoctions.  I figured that pancakes are very kid friendly, so Pumpkin Pancakes would be a great way to introduce the kids to pumpkin. The pancakes were delicious and big hit with the kids (and the mom's). The pumpkin taste is just right, not overpowering or overwhelming.
I will be making these again Thanksgiving morning.
 

Pumpkin Pancakes

Ingredients

  • 1 cup pumpkin puree (I use canned)
  • 1 3/4 cups milk
  • 1 egg
  • 2 tablespoons vegetable oil
  • 2 cups all purpose flour
  • 3 tablespoons light brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt

Instructions

In a large bowl, combine the milk, pumpkin, egg, and oil. In another bowl, mix together the flour, brown sugar, baking powder, baking soda, and spices. Fold the dry ingredients into the wet ingredients. Stir until combined, do not over mix.
 
Heat a lightly greased griddle or skillet over medium-high heat. Pour batter into small circles on the pan and allow each pancake to cook for 1-2 minutes per side, or until golden brown on each side. Serve the pancakes warm with maple syrup.

Turkey Cupcakes for Thanksgiving

 
These little Turkey Cupcakes were the highlight of one of our playdates last week! Not only did the kids enjoy eating them, but they had a blast putting them together! With a little help, even the younger kids were able to make a turkey cupcake of their own. These would be absolutely adorable for a children's Thanksgiving party or for a special kid's dessert on Thanksgiving.
 
To make your own turkey cupcakes, you will need cupcakes, chocolate icing (if you don't like chocolate, you could try to dye vanilla icing brown), black cake gel for the eyes (you could also use a dab of icing to stick mini chocolate chips on for the eyes), Fruit Rollups (you could also use Fruit By the Foot), Vienna Cookies (Nutter Butter Cookies work great too), and some toothpicks.
 
 
We got the rainbow fruit rollups and cut them into strips. You will need 1 Fruit Rollup per cupcake that you want to make.

 
Fold each strip over a toothpick to make the feathers.
 
 
         Before you fold over the red and yellow pieces, cut a little piece off to make the gobble (red) and a little triangle for the beak (yellow).

 
Ice the cupcakes and get decorating!!
